I love sweets, but since I don’t eat refined sugar I bake everything by myself and I always try to make a healthy version. Last weekend I made these delicious Portuguese rings. They are called popias alentejanas. I love them, but unfortunately the originals are not really healthy. That’s why I changed the recipe a little bit and made a healthy version!
For the popias you need:
- 150g spelt flour
- 100g oat flour
- 70g erythritol or xylitol (I used less)
- 0.5dl olive oil
- 30g low-fat quark (or soy yogurt)
- 30g almond butter
- 1/2 tbsp cinnamon
- 1/2 tbsp anise (optional)
- 100ml almond milk
Mix all ingredients together. If the dough gets too dry, use a little more milk. Now form small rings. You can also make big rings and put them on a baking tray. Bake the rings at 180ºC for about 15 minutes.
The popias go perfectly with a coffee!
